Our holiday cake consists of a chocolate genoise covered with fresh osmanthus chantilly cream.
The chocolate genoise sponge has a light and moist texture. Each cake is cut into three layers brushed with a osmanthus syrup, a yuzu marmalade, layered with freshly cut persimmons and osmanthus chantilly cream between each layer.
